Fried Tofu Chicken Soup








 Main Ingredient

Tofu (buy the tougher texture)
Chinese salted vegetable
Ginger
Shallot
Cooking oil
Chicken stock (half cube)



Preparation

Apply weight to drain off the liquid from the tofu. Leave the tofu under the weight for about an hour.

Tofu after drying for an hour.

Chopped Chinese salted vegetables and ginger into bits. Mixed them well in a bowl and set it aside.

Minced the tofu and add the Chinese salted vegetable and ginger mix together. Mix it well.

Carefully pat the tofu mix into a palm size patty.



Cooking

Ready the pan by heating up with cooking oil. Set to low heat to avoid tofu from burnt. Take note of water from tofu in contact with hot oil.

Get your tofu fry till golden brown on each side. A little char at the edges is fine.

Transfer the fried tofu to a large pan filled with one-third water. Dissolve half a cube of chicken stock into the water.
This tofu is great for vegetarian too, just replace the chicken stock with vegetable soup stock.

Bring it to boil and turn off the heat.

Top it with fried shallots. (optional)

A mouth-watering dish that is healthy and suitable for the young and the senior. This dish goes well with congee and steam brown rice. It is also a good source of proteins to substitute meat. Hope you enjoy this dish as much as I did.
